How do I make undhiyu?
Ingredients:
- 2 cups frozen or fresh mixed vegetables (such as eggplant, yam, green beans, and peas)
- 1 cup fresh or frozen green mung beans
- 1 cup fresh or frozen pigeon peas
- 1/2 cup fresh or frozen whole green gram
- 1/2 cup fresh or frozen whole black gram
- 1/4 cup sesame oil
- 1/4 cup fresh grated coconut
- 1/4 cup fresh chopped cilantro
- 1/4 cup fresh chopped mint
- 1/4 cup fresh chopped dill
- 2-3 tbsp sugar
- 2-3 tbsp jaggery
- 2-3 tbsp tamarind paste
- 2-3 tbsp lemon juice
- 2-3 tsp red chili powder
- 2-3 tsp cumin-coriander powder
- 2-3 tsp ginger-garlic paste
- Salt to taste
Instructions:
- In a large pot, bring 8 cups of water to a boil. Add the mixed vegetables, green mung beans, pigeon peas, green gram, and black gram to the pot. Cook for 15-20 minutes, or until the vegetables are tender.
- Drain the cooked vegetables and set them aside.
- In a large pan, heat the sesame oil over medium heat. Add the ginger-garlic paste and sauté for 1-2 minutes.
- Add the red chili powder, cumin-coriander powder, and salt to the pan and sauté for an additional 1-2 minutes.
- Add the cooked vegetables, coconut, cilantro, mint, dill, sugar, jaggery, tamarind paste, and lemon juice to the pan. Mix well and cook for an additional 5-7 minutes.
- Serve the undhiyu warm with roti or rice.
Note: The vegetables and ingredients can be adjusted as per your preference and availability.
