How do I make undhiyu?

 Ingredients:

  • 2 cups frozen or fresh mixed vegetables (such as eggplant, yam, green beans, and peas)
  • 1 cup fresh or frozen green mung beans
  • 1 cup fresh or frozen pigeon peas
  • 1/2 cup fresh or frozen whole green gram
  • 1/2 cup fresh or frozen whole black gram
  • 1/4 cup sesame oil
  • 1/4 cup fresh grated coconut
  • 1/4 cup fresh chopped cilantro
  • 1/4 cup fresh chopped mint
  • 1/4 cup fresh chopped dill
  • 2-3 tbsp sugar
  • 2-3 tbsp jaggery
  • 2-3 tbsp tamarind paste
  • 2-3 tbsp lemon juice
  • 2-3 tsp red chili powder
  • 2-3 tsp cumin-coriander powder
  • 2-3 tsp ginger-garlic paste
  • Salt to taste

Instructions:

  1. In a large pot, bring 8 cups of water to a boil. Add the mixed vegetables, green mung beans, pigeon peas, green gram, and black gram to the pot. Cook for 15-20 minutes, or until the vegetables are tender.
  2. Drain the cooked vegetables and set them aside.
  3. In a large pan, heat the sesame oil over medium heat. Add the ginger-garlic paste and sauté for 1-2 minutes.
  4. Add the red chili powder, cumin-coriander powder, and salt to the pan and sauté for an additional 1-2 minutes.
  5. Add the cooked vegetables, coconut, cilantro, mint, dill, sugar, jaggery, tamarind paste, and lemon juice to the pan. Mix well and cook for an additional 5-7 minutes.
  6. Serve the undhiyu warm with roti or rice.

Note: The vegetables and ingredients can be adjusted as per your preference and availability.
